KAMEI SUSHI

FOUNDED

01 / THE BEGINNING — 1887

It began with our family business,
Kamei Sushi.

The roots of SUSHI TAKÉ lie in Kamei Sushi, our family business established in 1887.

Times changed, and so did the shape of the restaurant. But one thing stayed the same: welcoming each guest and working honestly with the fish of the day. That commitment was passed down through our family, one day at a time.

02 / FROM KAMEI SUSHI TO SUSHI TAKÉ — 2015

From Kamei Sushi to SUSHI TAKÉ

In 2011, I had to close Kamei Sushi.

The business of a long-established sushi restaurant had struggled to keep pace with the times. By the time I took over, it was already facing serious difficulties.

Kamei Sushi had continued as a family business for four generations and had once grown to more than 20 locations across Japan. After my parents passed away, we closed its doors and began again from scratch.

After the closure, I worked behind the scenes to support other sushi restaurants, helping improve their sales and plan new openings. It was rewarding work in its own way.

During that time, many of our former guests reached out to say how much they hoped we would reopen.

That was when I realized once again: I wanted to run a sushi restaurant.

“I love serving delicious sushi to my guests. That is what I truly want to do.”

This was the work that felt right for me.

Once I had made up my mind, it did not take long to decide to open my own restaurant again.

“Let’s create a welcoming place where everyone can enjoy truly delicious sushi.”

With that in mind, I opened SUSHI TAKÉ in UEHARA on November 20, 2015.

SUSHI TAKÉ HACHIMAN

SECOND LOCATION OPENS

03 / SUSHI TAKÉ EXPANDS TO HACHIMAN — 2024

SUSHI TAKÉ continues to grow

On October 29, 2024, we opened our second location in the Yoyogi-Hachiman area: SUSHI TAKÉ HACHIMAN.

To share sushi with our guests, we also need to nurture skilled sushi artisans who take pride in their work.

By creating more opportunities for artisans to grow and bringing carefully made sushi to more guests, we are also committed to supporting the next generation of the sushi industry.

Today, we welcome guests at two locations: UEHARA and HACHIMAN.

Our aim is not to create a place where guests feel they need to put on airs. We want to serve carefully made sushi in a comfortable setting, with the warmth of a family restaurant and a straightforward commitment to deliciousness.

We honor what has been passed down to us while adapting it to the needs of today’s guests, so we can carry it forward to the next generation.

TODAY

OUR PROMISE

OUR BELIEFS

04 / OUR PROMISE — TODAY

We give every piece our full attention.

Words from our 3rd generation, Yukimasa, have stayed with us:

“Work honestly, and never bring shame to the family name.”

“It is important to make things affordable. But never lower the quality just to bring the price down.”

“Guests can tell what is genuine, even when it seems they don’t notice. Don’t rely on tricks or chase trends.”

These words continue to shape the way we think at SUSHI TAKÉ.

Rice, fish, wasabi, and nori. We do not try to be different for its own sake; we give each ingredient the care and attention it deserves.

Above all, we want each guest to enjoy sushi they can truly call delicious.

We give every piece our full attention.

We will continue to value that commitment, one piece at a time.
