THE EXPERIENCE

Every piece deserves our full attention.

At UEHARA, we serve nigiri one piece at a time, guided by the fish available that day. With just nine seats at the counter, you can watch the chef’s work up close and take your time enjoying each piece.

OWNER-CHEF

Takeshi Mori

Takeshi was born into the generational family sushi restaurant called Shinjuku Kamei Sushi, founded in 1887. He began training under his father at early 20s. After running the restaurant for nearly 20 years, he opened SUSHI TAKÉ in Yoyogi-Uehara in November 2015, in the neighborhood of his wife’s family home.

Carrying forward the values of family’s legacy, he has spent 40 years honing his craft and trusting his own palate and instincts. He uses only ingredients he considers truly delicious. His warm manner and easy conversation have earned him a devoted following among local guests and those who travel from farther away.

SECOND-GENERATION CHEF

Kentaro Mori (Ken)

Kentaro was born into a family of sushi chefs whose lineage dates back to Shinjuku Kamei Sushi, founded in 1887. He grew up around the craft. After graduating from high school in Tokyo, he moved to New York on his own to study business at university and spent about five years abroad, including working there, before returning to Japan to pursue sushi professionally.

Living overseas gave him a renewed appreciation for Japanese food culture and craftsmanship. Drawing on that experience, he shares the distinctive flavors and textures of Japan, along with the stories behind the fish, markets, the chef’s craft, and sushi’s history and culture.

To help guests understand sushi more deeply, he hosts Ken’s Omakase at the counter on Mondays and Tuesdays and offers guided market experiences. These are well suited to overseas visitors, family and friends visiting Tokyo, and corporate guests.

MON & TUE ONLY

Ken’s Omakase

On Mondays and Tuesdays, second-generation chef Kentaro Mori (Ken) takes the counter. Ken’s Omakase is based on our regular Hana, Tsuki, and Yuki courses, with each piece introduced as it is served.

Ken honors the craft passed down through his ancestors while sharing the stories behind the fish, the market, and sushi’s history and culture in itself. Enjoy the flavors of Japanese food culture alongside the work of a sushi chef. English-language guidance is available.

The prices are the same as the regular Hana, Tsuki, and Yuki courses.
