YOUR GUIDE

SUSHI TAKÉ’s Second-Generation Chef
Kentaro Mori

Kentaro is the fifth-generation sushi chef in a family whose history in sushi dates back to Shinjuku Kamei Sushi, founded in 1887. He grew up around the craft. After graduating from high school, he moved to New York on his own to study at university and spent about five years abroad, including working there, before returning to Japan to train professionally as a sushi chef.

Living overseas gave him a renewed appreciation for Japanese food culture and craftsmanship. He is dedicated to sharing not only the taste of sushi, but also the stories behind the fish, markets, the chef’s work, and Japanese history and culture.

English-language guidance is available. Please get in touch if you are visiting Tokyo with family or friends, welcoming overseas guests, or arranging an experience for your company.
